  1. Preheat oven to 375 degrees F. 
  2. Grease a 9×13-inch baking dish with cooking spray. 
  3. Layer the eggplant slices in the baking dish, followed by the black beans and salsa. 
  4. Sprinkle nutritional yeast, garlic powder, onion powder, and salt over the top of the casserole. 
  5. Bake for 25 minutes or until heated through and bubbly. Garnish with fresh cilantro before serving.
