Instructions:
- Preheat oven to 375 degrees F.
- Grease a 9×13-inch baking dish with cooking spray.
- Layer the eggplant slices in the baking dish, followed by the black beans and salsa.
- Sprinkle nutritional yeast, garlic powder, onion powder, and salt over the top of the casserole.
- Bake for 25 minutes or until heated through and bubbly. Garnish with fresh cilantro before serving.
