Instructions:
- Preheat oven to 375 degrees F (190 degrees C).
- Toss the butternut squash, onion, and garlic in olive oil, salt, and pepper. Spread on a baking sheet and roast for 25 minutes or until tender.
- Bring vegetable broth to a boil over medium heat in a soup pot. Add roasted vegetables and nutritional yeast flakes. Simmer for 10 minutes.
