-1/4 cup granulated sugar

Instructions:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9-inch cake pan.
- Mix grated carrots, almond milk, flour, salt, baking powder, and vegan margarine in a medium bowl. Mix well until well blended.
- Pour batter into the prepared pan and spread evenly. Sprinkle chopped walnuts over the top.
- Bake for 30 minutes or until a toothpick inserted into the center comes out clean. Cool cake in pan for 10 minutes before removing to a wire rack to cool completely.
- Once the cake is cool, cut it into 1-inch squares and roll each square into a ball.
- In a small bowl, combine granulated sugar and vanilla extract until well blended.
- Roll carrot cake balls in the sugar mixture to coat evenly. Enjoy!
