Vegan Jalapeno Poppers

If you’re looking for a more indulgent option, these vegan jalapeno poppers are sure to hit the spot! Not only are they packed with fiery spice, but they are also stuffed with a creamy cashew-based filling.

Ingredients:

  • 1 cup raw cashews, soaked in water for 1-2 hours
  • 1/2 cup unsweetened plant milk
  • 3 cloves garlic, minced
  • 1 jalapeno, chopped (seeds and membranes removed)
  • salt and pepper, to taste
  • 6-8 jalapeno peppers, halved lengthwise
  • 1/4 cup panko breadcrumbs
  • 2 Tbsp olive oil

Directions:

1. In a food processor or high-speed blender, combine the soaked cashews, milk, garlic, chopped jalapeno, and salt and pepper until smooth and creamy. Transfer to a bowl and set aside.

2. Carefully scoop out the seeds from each halved jalapeno half and discard them. Spoon some of the cashew fillings into each halved pepper, ensuring enough room to be stuffed without overflowing. Set aside.
