3. Bake for 20-25 minutes or until the cauliflower is golden brown and tender. Remove from heat and drizzle with the coconut milk. Serve warm with your favorite dipping sauces, such as mango chutney or cilantro-lime sauce.

Avocado-Tahini Rolls

For a lighter and slightly healthier appetizer, try these avocado-tahini rolls. The combination of creamy avocado and nutty tahini is sure to be a crowd-pleaser!

Ingredients:

  • 1 ripe avocado
  • 1/2 cup tahini paste
  • juice of 1 lemon
  • 1 clove garlic, minced
  • salt and pepper, to taste
  • 1 package rice paper wraps or collard green leaves
  • chopped fresh herbs, such as cilantro or basil (optional)

Directions:

1. In a small bowl, stir the avocado, tahini paste, lemon juice, garlic, and salt and pepper until well combined. Set aside.

2. Fill a large shallow dish or bowl with warm water. Dip one rice paper wrap at a time into the water for about 10 seconds until it softens and becomes pliable. Transfer to a flat surface and place a few slices of avocado in the center. If desired, top with some chopped herbs, then tightly roll the rice paper and wrap up like a burrito. Repeat with the remaining ingredients until you have used up all of your fillings.
