Coconut Curry Cauliflower Bites

Ingredients:
- 1 head cauliflower, cut into bite-sized florets
- 2 Tbsp olive oil or coconut oil
- 1/2 cup full-fat coconut milk
- 3 Tbsp curry powder
- 1 Tbsp ground turmeric
- salt and pepper, to taste

1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone mat, and set aside.
