Stuffed Mushrooms

These savory stuffed mushrooms are a classic appetizer that always seems to go over well. The combination of creamy cashew cheese, garlic, and fresh herbs will delight your taste buds with every bite!
Ingredients:
- 1 pound button or cremini mushrooms, stems removed
- 1/4 cup cashews, soaked for at least 4 hours in 1/2 cup water
- 3 cloves garlic, minced
- 1 Tbsp nutritional yeast
- 1/4 cup fresh parsley, chopped
- salt and pepper, to taste
Directions:
1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone mat, and set aside.
2. In a food processor, combine the soaked cashews, garlic, nutritional yeast, and parsley. Process until smooth, scraping down the sides of the bowl as needed. Season with salt and pepper, if desired.
3. Use a spoon to scoop out some of the mushroom filling from each mushroom cap, leaving enough room at the top to be stuffed.
