Cooking with Turmeric: 6 Recipes

Ingredients:

  • 4 cups of mixed vegetables (e.g., carrots, broccoli, cauliflower, bell peppers)
  • 2 tablespoons of olive oil
  • 2 teaspoons of ground turmeric
  • Salt and pepper to taste
  • Optional herbs such as rosemary, thyme, or oregano

Preparation:

  • Preheat the oven to 400°F (200°C).
  • Cut the vegetables into uniform sizes and place them in a large bowl.
  • In a small bowl, whisk together the olive oil, turmeric, salt, pepper, and optional herbs.
  • Pour the turmeric mixture over the vegetables, tossing to coat evenly.
  • Spread the vegetables on a lined baking sheet in a single layer.
  • Roast for 25-30 minutes, turning halfway, until the vegetables are tender and lightly browned.
