6 Yummy Vegan Christmas Cookies

-1 cup vegan chocolate chips

-1/4 cup granulated sugar for rolling

-2 tablespoons chopped peppermint candies (optional)

Directions:

  1. Preheat oven to 350 degrees F and grease a baking sheet with butter or margarine.
  2. Cream the butter, 2 cups sugar, vanilla extract, and peppermint extract in a large bowl.
  3. In a separate bowl, slowly whisk the cocoa powder and baking soda. Add to the butter mixture and stir until well combined.
  4. Gradually add in the flour while stirring until a thick cookie dough forms. Fold in the chocolate chips.
  5. Pour the granulated sugar into a shallow bowl. Use a spoon or your hands to form the dough into small balls, rolling them in the sugar until well-coated. Place on the prepared baking sheet and press down gently to flatten slightly.
  6. Bake for 12-15 minutes, until the cookies are cracked on top and lightly browned around the edges. 
  7. Cool on the baking sheet for at least 5 minutes before transferring to a wire rack to cool completely. Enjoy your delicious chocolate peppermint cookies!
