6 Yummy Vegan Christmas Cookies

-2 cups (240 g) confectioners’ sugar

-1 1/2 teaspoons red food coloring

Instructions: 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. 
  2. In a medium bowl, combine peanut butter, sugar, vanilla extract, and salt. Mix well. 
  3. Whisk together flour, baking soda, and baking powder in another medium bowl. 
  4. Add to peanut butter mixture and mix well. Stir in oil until well combined. The dough will be thick. 
  5. Roll dough into 1-inch balls and place on the prepared baking sheet. 
  6. Bake for 8 minutes or until golden brown. Cool on the baking sheet for 5 minutes before transferring it to a wire rack to cool completely. 
  7. Mix confectioners’ sugar and red food coloring in a small bowl until you achieve the desired color. 
  8. Drizzle over cookies when cool enough to handle.
