-2 cups (240 g) confectioners’ sugar
-1 1/2 teaspoons red food coloring
Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, combine peanut butter, sugar, vanilla extract, and salt. Mix well.
- Whisk together flour, baking soda, and baking powder in another medium bowl.
- Add to peanut butter mixture and mix well. Stir in oil until well combined. The dough will be thick.
- Roll dough into 1-inch balls and place on the prepared baking sheet.
- Bake for 8 minutes or until golden brown. Cool on the baking sheet for 5 minutes before transferring it to a wire rack to cool completely.
- Mix confectioners’ sugar and red food coloring in a small bowl until you achieve the desired color.
- Drizzle over cookies when cool enough to handle.
