-3 tablespoons water

-1/3 cup organic cane sugar

Instructions:

  1. Preheat oven to 350 degrees F.
  2. Line a 12-cup muffin tin with paper liners.
  3. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  4. Whisk together the oil, water, and applesauce in a separate small bowl.
  5. Pour the wet ingredients into the dry ingredients and mix until well combined. 
  6. Then, fold in the chocolate chips. Be careful not to overmix; overmixing can result in tough cakes. 
  7. Scoop the batter evenly among the muffin cups. 
  8. Bake for 20 minutes or until a toothpick inserted into the center of a cake comes out clean. 
  9. Allow the cakes to cool in the muffin tin for 5 minutes before transferring them to a wire rack to cool completely.
