- 1 block of extra-firm tofu
- 1/2 red onion, diced
- 1 bell pepper, diced
- 1 jalapeño pepper, seeded and diced
- 2 tablespoons olive oil
- 1 tablespoon arrowroot powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup vegetable broth
- 2 tablespoons nutritional yeast flakes
Instructions:
1. Preheat the oven to 375 degrees F (190 degrees C).
2. Cut the tofu into small cubes.
3. In a skillet over medium heat, cook the onion and bell pepper in olive oil until softened. Add the tofu and jalapeño pepper, and cook for 5 minutes more.
4. Whisk together the arrowroot powder, salt, and black pepper in a bowl. Add this mixture to the skillet, and simmer for 5 minutes more.
5. In a baking dish or casserole, combine the tofu mixture with the vegetable broth. Sprinkle with nutritional yeast flakes before serving.
