Ingredients:

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained and rinsed
  • 1 red onion, diced
  • 2 cloves garlic, minced
  • ½ cup chopped cilantro
  • ½ cup vegan sour cream
  • 1 teaspoon chili powder
  • Pinch of salt
  • Pinch of black pepper

Instructions:

  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine black beans, corn, red onion, garlic, cilantro, vegan sour cream, chili powder, and salt and pepper.
  3. Transfer the mixture to the prepared baking sheet and bake for 30 minutes or until heated through.
  4. Serve over cooked brown rice and top with your choice of salsa, avocado, or guacamole.
