Sicilian Rice Balls

These crispy rice balls are a delicious vegan version of the classic Italian dish. They make a great appetizer or main course, and you can easily make them ahead of time. So that means more time to enjoy your party!
Ingredients:
- 1 cup uncooked white rice
- 1/2 red onion, diced
- 1 bell pepper, diced
- 1 carrot, peeled and grated
- 1/4 cup chopped fresh parsley
- 3 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil or vegetable oil
- 2 tablespoons tomato paste
- 2 cups water
Instructions:
In a large bowl, combine the rice, onion, bell pepper, carrot, parsley, garlic, salt, and black pepper. Mix well. In a small bowl, whisk together the oil and tomato paste. Add this to the rice mixture and stir until everything is evenly coated. Add the water and stir again. Cover the bowl with a lid or plastic wrap and let it sit for about 30 minutes—Preheat the oven to 350 degrees F (175 degrees C). Lightly oil a baking sheet. Shape the mixture into small balls, using about two tablespoons of mixture for each ball. Place the balls on the prepared baking sheet and bake for 25 minutes until they are crispy and golden brown.
