- One tablespoon of olive oil
- One yellow onion, diced
- Three cloves of garlic, minced
- One teaspoon of freshly grated ginger
- Red pepper flakes, to taste
- One can of coconut milk
- One cup of vegetable broth
- One cup of smooth peanut butter
- Two carrots, peeled and diced
- One large sweet potato, peeled and diced
- One bunch of kale stemmed and chopped
- Salt and pepper to taste
Instructions:
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until the onion is translucent. Add the ginger and red pepper flakes and cook for one minute, stirring frequently. Next, add the coconut milk, vegetable broth, peanut butter, carrots, sweet potato, kale, salt, and pepper to a crockpot. Stir until everything is well combined. Cook on low for six to eight hours or on high for three to four hours. Once finished, garnish with green onions or cilantro.
