Vegan Breakfast Recipes To Start Your Day Off Right

Ingredients:

  • 1 banana
  • 1/4 cup all-purpose flour
  • Pinch of baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 3 tablespoons vegan butter, softened
  • 2 tablespoons granulated sugar
  • 1/4 applesauce
  • 1 tablespoon vanilla extract

Instructions:

First, preheat a griddle or frying pan over medium heat and add the vegan butter. Once melted, add the granulated sugar and continue to cook until the sugar is melted and bubbly. Then, in a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, apple sauce, and nutmeg. Add this mixture to the sugar and butter mixture and stir until combined. Next, mash the banana in a medium bowl and add this mixture to the batter. Stir until just combined. Finally, pour batter onto the griddle or frying pan and cook for about 3 minutes per side until golden brown. Serve hot with your favorite syrup or jam!
