This Broccoli and Chickpea Curry is a comforting, nutrient-packed dish that is perfect for a cozy dinner. The addition of chickpeas gives a protein boost, while the blend of spices adds depth to this hearty curry.

Ingredients:

  • 1 large head of broccoli, cut into florets
  • 1 can of chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon of curry powder
  • 1 teaspoon of turmeric
  • 1 can of coconut milk
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Preparation:

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion and garlic and sauté until the onion is translucent.
  • Add the curry powder and turmeric and stir well to combine.
  • Add the broccoli and chickpeas to the pot and stir to coat them in the spice mixture.
  • Pour in the coconut milk and season with salt and pepper. Bring the mixture to a simmer.
  • Cover the pot and let it simmer for about 15-20 minutes until the broccoli is tender and the flavors are well combined.
