Being vegan can be difficult at times as there are not many options left for you. And it sure can be more difficult to try to bring a change into your diet. If you are thinking about adding another diet plan to your schedule, it must be the Mediterranean diet. The Mediterranean diet is an easy diet to follow if you are a vegan as the diet consists of whole grains, fruits, and vegetables. So, don’t worry and give the Mediterranean diet a chance. Below are some dishes which are a must-try.

Tahini Chocolate Chip Cookies

Chocolate chip cookies are the most wonderful dessert. As a vegan, there are fewer chances of being able to enjoy a chocolate chip cookie but let’s change that as these cookies taste like little bundles of joy.

Tahini is mostly used for savory foods, and it might seem unusual to add it to a sweet dish.


First, take some virgin coconut oil and mix some maple syrup, tahini, and vanilla until they are smooth and emulsified. Add in the dry ingredients: the flour, salt, baking soda, and a pinch of salt. Mix them nicely so that there are no lumps. It should be more of a dry batter. Add the chocolate chips in the end. Bake them at 350 degrees Fahrenheit until golden brown.

Greek Quinoa Salad

What’s not to like about chickpeas, cucumber, and fresh herbs? All of these mixed together bring out a beautiful flavor, and it is quick and very easy to make. 


Rinse and cook the quinoa as mentioned on the package. While that is cooking, chop some tomatoes, cucumber, olives, coriander, parsley, and onions. 

Add all these vegetables to the cooked quinoa and add some salt, pepper, and garlic powder. Add some boiled chickpeas and squeeze some lemon juice into your bowl. Mix it well, and you are good to go.

Mediterranean Pizza

Well, who says you can’t make pizza without cheese. Here is an amazing pizza recipe that will satisfy your cravings for a pizza.


You can either use pre-made pizza dough or can make it by yourself. One tip that is worth the try is to bake the dough a little bit before adding the ingredients.  It saves the pizza from getting soggy. So once you have baked the dough for 7-10 mins, start by spreading the sauce; after doing that, you can add tomato slices, sliced onions, chopped artichokes, and olives with some chickpeas on it. Sprinkle some red chili flakes and salt on it. Bake for a good 12-15 minutes, and you have got yourself a flavorful, vegan, and Mediterranean Pizza.

Chickpea Pancake-Flatbread 

This pancake or even omelet, if you want to call it that, is a great dish to start your day with.


You need some chickpeas, flour, cumin, garlic powder, baking soda, turmeric, salt, and lemon for your dish.

For the filling, you can chop your favorite vegetables to add to it.  

Combine the flour and all the ingredients into a bowl and pour some water into it. Make sure there are no lumps in it. Add some chopped veggies like mushroom, kale, tomatoes, onions into it. Lastly, squeeze in the lemon juice and stir it. Pour some of the mixture on a preheated griddle. After 5 minutes flip and let the other side cook for some time. There you have it, the most wonderful pancake of all time.

Baked Falafel Salad

Chickpeas are a versatile ingredient that people use in many different dishes. You can cook the falafel by baking it instead of frying in oil for a healthier alternative. 


Take a cup of chickpeas and soak it overnight. Then take some chopped cilantro, parsley, fresh dill, onions and garlic. In a blender, combine all the ingredients mentioned above and add some salt and pepper to your mixture. Squeeze some lemon juice into it. After blending them, make some patties out of the mixture. Place these patties on an already greased skillet and bake it for 15-20 mins. Keep an eye on them,  so that they don’t burn.

You can use falafel’s in many dishes, so you can even store them for next time too. 

For the salad, chop the type of vegetables you prefer in a salad.

In another bowl, make the dressing for your salad.  To make that, you need to mix 4 tsp of tahini, some garlic powder,  cilantro, parsley, Himalayan salt, the juice of one lemon, and some water. Take a bowl and add the chopped vegetables to it. Add some falafel and top them with the lemon dressing.

Lemon Chickpea Soup

It is a Greek-inspired dish and is very easy to make. It contains a lot of ingredients, so stay put as the results are going to be awesome.


Heat some water and add some chopped carrots and onion in it for 7 mins. Then mix some garlic and saute it. Let the water come to a boil, and then add some soaked chickpeas and orzo into it. Boil them until they are tender. Remove it from the stove and add tahini and lemon juice into it. Add some kale and spinach into it. Then season this dish with salt and pepper. Stir it well and serve hot.
