  • 2 cups red lentils
  • 1 cup brown lentils

  • 1 Tbsp. ground cumin
  • 1 tsp thyme
  • 1 tsp whole fennel seeds
  • 1 tsp paprika
  • 1 Tbsp. tomato paste
  • 8 cups veggie broth
  • Salt and pepper to taste
  • Canned coconut milk

Select the saute function on your instant pot and add in the olive oil. Saute the onion and garlic until translucent. Add the carrots and celery with a pinch of salt. Cook for roughly 10 minutes or until softened. Add your spices and cook for about a minute until they are fragrant. Next, add the tomato paste and lentils. Stir all ingredients until they are combined, then add your broth.

Add on your lid and pressure cook for 15 minutes. After the 15 minutes is up, release the pressure naturally for 15 more minutes. Stir well and add a cup or so of coconut milk, depending on how thick you want the soup. Lastly, season to taste with salt and pepper and dish it up.

Instant Pot Mac And Cheese

Who doesn’t love mac and cheese? Just the thought of a bowl full of a warm and cheesy bowl of mac and cheese puts a smile on the face. After all, it tastes like a hug, doesn’t it? So, let’s learn how to make this bowl of goodness the vegan way. 

Ingredients

  • 1 lb box of macaroni noodles
  • 4 cups water
  • 1 tsp salt
  • 2 Tbsp. vegan butter
  • ½ cup non-dairy milk
  • 2 cups shredded vegan cheese

Making mac and cheese is already quite straightforward. And making it in an instant pot is all the more convenient. To make this, pour 4 cups of water in the pressure cooker and approximately 16oz of macaroni pasta.

Season it with nothing but a pinch of salt, and allow it to cook in the pressure cooker for 4 to 5 minutes. Instant Pot Creamy Tomato Basil Pasta

Ingredients

  • 2 Tbsp. olive oil
  • 1 yellow onion, diced
  • 4 cloves garlic, chopped
  • 1 tsp. Italian seasoning
  • 1/2 tsp. red pepper flakes
  • 1 tsp. sugar
  • 1 cup water
  • 8 oz of your favorite pasta
  • 14.5 oz can diced tomatoes
  • 1 Tbsp. tomato paste
  • Salt and pepper to taste
  • 1/2 cup chopped basil

To make this, first add some olive oil, minced garlic, and sliced onion to the instant pot. Saute it for a couple of minutes, and add some Italian seasoning, salt, red pepper flakes, and sugar. Next, pour 1-1.5 cups of water and then add 8oz of your preferred pasta. Give it a slight stir and add the remaining ingredients such as diced tomato, tomato paste, and some salt and pepper.

Cook the pasta on high pressure for approximately 4-5 minutes. Once the timer goes off, open the lid and stir it. Add vegan cream or vegan cheese, and then a generous amount of basil leaves. Give it one final stir, and your vegan instant pot pasta is ready!
